Chef Mon Coeur / Spinach & Carpaccio Salad

Spinach & 
Carpaccio Salad
with 
Parmesan Flakes
Caramelized Onions & Pears  
Ingredients:

Salad: 

Spinach
4 oz of Carpaccio
4 Pears
2 Yellow Onions
Parmesan Cheese
1/2 Cup Balsamic
1/2 Cup Sugar
Salt & Pepper

Sauce:
1 Cup Balsamic
1 Cup Sesame Oil
1/2 Cup Apple Cider Vinegar
1/4 Cup Olive Oil
3 Tablespoons of Thyme
1 Tablespoon pink peppercorns
Salt

Procedure:

Salad:

Wash spinach and let it dry. 
Put spinach in a bowl.
Cut the pears into slices and add salt & pepper
To caramelize the onions we use balsamic, and sugar to create a nice sweet flavor.
Mix everything in the bowl of spinach, and add on the top parmesan flakes.

Sauce:
In a bowl mix the balsamic vinegar, sesame oil, olive oil, apple cider vinegar, thyme, pink peppercorns, salt and pepper. Mix well.
